Abstract: Rice water as the accessory substance of rice contains rich water-soluble protein,free amino acid (FAA), mineral composition and vitamin. Rice water is a kind of nutritional health products which are suitable for the people of all ages. It has some efficacy,such as stopping diarrhea、curing constipation、dispelling the effects of alcohol、fortifying the masculine function、treating gastritis、nourishing the stomach、improving eyesight、tonifying the kidney、diuresis、curing gynecopathy、suiting for efficacy-enhancing ingredient and retarding the insomnia. The way of cooking rice water was briefly introduced in this paper.
