Abstract:The physical and chemical indexes of appearance quality and edible quality of 32 high-quality rice varieties evaluated in Fujian Province in 2018 were tested and analyzed. The results showed that the transparency of all high quality rice varieties reached the first grade standard of quality. The rate of reaching the standard of chalkiness, amylose and gel consistency was higher, but only one of them did not reach the standard of high quality. However, the rate of reaching the standard of alkali spreading value was low (81.3%), which should be further improved.
